Chocolate Orange Shortbread

Dried Cherries and Lime Shortbread Cookies

Chocolate Orange Shortbread

1 cup butter, softened

½ cup sifted powdered sugar

1 teaspoon orange zest 10 -20+ drops doTERRA Wild Orange Essential Oil

2 cups flour

1 cup chocolate chips or block melting chocolate

  1. Cream butter in a large bowl, gradually adding sugar and beating until light and fluffy. Stir in orange zest and Wild Orange essential oil. Gradually add flour.
  2. Place dough between two layers of plastic wrap. Roll until ¼ inch thick. Refrigerate on a flat surface until firm, about 1 to 2 hours.
  3. Preheat oven to 325 degrees. Remove dough from plastic and use a butter knife to cut into equal sized square or rectangles. Transfer cut pieces to a parchment lined baking sheet.
  4. Bake 18-20 minutes, or until edges are lightly kissed with brown.
  5. Cool cookies on wire rack.
  6. Melt chocolate in a small microwave safe bowl by microwaving on 50% power for 30 seconds at a time stirring between.
  7. Dip cookies in chocolate covering 1/3 to ½ of the cookies and transfer to parchment paper to harden.
  8. Store in covered container.

Dried Cherries and Lime Shortbread Cookies

1 Cup butter softened

3/4 cup powdered sugar

2-3 Tbsp grated lime peel

3-4 drops Lime doTerra essential oil

2 tsp almond flavoring

2 Cups all purpose flour

1/4 tsp baking powder

1/4 tsp salt

1/2 cup chopped dried cherries, or substitute dried Craisens if desired

  1. In a large bowl, cream butter and sugar till well blended, beat in lime peel, lime essential oil and flavoring.
  2. Add in baking powder, salt and blend well, stir in flour till just incorporated and then add in the dried cherries.
  3. Divide the dough in half; shape into a log shape about 1” x 7” diameter. Wrap in plastic wrap refrigerate for 3-4 hours till firm.
  4. Unwrap and cut dough crosswise into 1/4” inch slices. Place approximately 2” apart on cookies sheet. Bake at 350 degrees for 9-11 minutes or until edges are golden brown. Remove to rack to cool.
  5. For a fancier cookie these can be drizzled with chocolate.

Almond Oil JOY Bites

6 ounces pitted dates about 1 cup or 10-12 dates

1 cup unsalted, whole almonds can use slivered almonds just use about 3/4 cup

1/2 cup shredded coconut sweetened or unsweetened

1/2 cup unsweetened cocoa powder Dutch Process is what I prefer

1-3 Tbsp coconut oil

Essential oil flavor of choice: toothpick of Pink Peppercorn, Cinnamon bark, Wild Orange, toothpick of peppermint or spearmint experiment with what you like. Start w small amount.

Pinch of salt

  1. Combine all the ingredients ( start with 1-2 tablespoons coconut oil) in a food processor and process until the ingredients are finely chopped and the mixture is crumbly. If the mixture won’t hold together in your hand, add a bit more coconut oil and process a bit more fine. Work it till the mixture will hold together.
  2. Roll the mixture into balls of desired size I generally use a small scoop.
  3. Store in the refrigerator for up to a month, in an airtight container.
